Hey Cocktailers — The Summer of Shrubs continues this week with one of my personal favorites: Peach. We’ll spend the first part of class putting together a seasonal peach shrub before using it as the base of three uniquely different speciality cocktails. It has been particularly hot this summer, especially here in New York, and these cocktails are the perfect way to cool off in front of a windowed air conditioning unit. If you are lucky enough to be blessed with central air in your home, don’t bother coming. I won’t be able to contain my jealousy. (Just kidding. You can still come).
For those of you new to the shrub game, they are essentially flavored drinking vinegars. They are generally made with fruit and flavored with different sweeteners, herbs, spices and some sort of acid; in this case citrus and vinegar. The flavor can be tamed down or punched up depending on how much vinegar you use in your mixture. Some like a lot of punch. Some prefer it a little more mild. Which are you? I guess you won’t know the answer to that unless you come and make one in class with us and try for yourself.
